Veggie Pasta Salad

Ingredients

SALAD INGREDIENTS

  • 1 lb. whole grain pasta
  • 1 can beans of your choice, drained and rinsed
  • 1/2 cup chopped parsley
  • 6 cups chopped vegetables
  • Cherry tomatoes
  • Cucumbers
  • Zucchini
  • Bell pepper, any color
  • Shredded carrots
  • Onions

VINAIGRETTE INGREDIENTS

  • 2/3 cup apple cider vinegar
  • 1 cup olive oil
  • 1 Tbsp. honey
  • 1 Tbsp. Italian seasoning
  • 1/2 tsp. salt
  • 1/2 tsp. ground black pepper

Instructions

  • Cook pasta as directed on package. Rinse with cold water and drain.
  • In a large bowl, combine cooked pasta, beans, parsley and your choice of chopped vegetables. Toss well.
  • Whisk together vinaigrette ingredients in a separate bowl.
  • Add vinaigrette to salad. Stir until ingredients are evenly coated.
  • Serve immediately or store in the refrigerator for up to a week.

Notes

This recipe makes a large batch. It’s the perfect healthy side to bring to a gathering!
