Ingredients

  • 2 oz. red wine vinegar
  • Juice of one lime
  • 3 oz. olive oil
  • ½ tsp. ground cumin
  • 1/4 tsp. black pepper
  • 2 garlic cloves (crushed and finely minced)
  • ½ tsp. kosher salt
  • 1 small red onion (finely diced)
  • 1 small green bell pepper (finely diced)
  • 1 small red bell pepper (finely diced)
  • cup frozen corn
  • 6 green onions (finely sliced)
  • 1 jalapeno (finely diced, ribs and seeds removed)
  • 1 cup tomatoes (quartered)
  • 1 15 oz. can black-eyed peas (drained)
  • ½ bunch fresh cilantro (chopped)

Instructions

  • In a large bowl, whisk together vinegar, lime juice, oil, spices, garlic and salt.
  • Gently mix in remaining ingredients.
  • Set aside for at least 30 minutes to allow the flavors to develop.
