Pumpkin Oatmeal Chocolate Chip Cookies

Ingredients

  • 1/3 cup canola oil
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 tsp. pumpkin pie spice
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1 egg
  • 1 1/2 cups flour
  • 1/2 tsp. baking powder
  • 2 1/2 cups quick oats
  • 1 cup semisweet chocolate chips

Instructions

  • Preheat oven to 350°F. Line three sheet pans with parchment paper.
  • Whisk together the oil, sugars, pumpkin pie spice, pumpkin puree and egg in a medium mixing bowl until well combined.
  • Add flour and baking powder and whisk well. Fold in oats and chocolate chips.
  • Drop the dough two inches apart on the sheet pans and bake for 16-20 minutes or until edges are golden brown.
  • Let cool for 10 minutes, and then enjoy!

Notes

For a holiday twist, add cinnamon and nutmeg to the cookie dough.
