These fun treats will help cool you off in a healthier way after a hot summer’s day! These are super easy to make and a great way to use spare bananas. Bring them along to your next kid-friendly get-together or potluck, or keep them in the freezer for an after-dinner bite.
Prepare a small sheet pan or large plate with parchment paper (one that you can fit in the freezer).
Place dark chocolate in a medium-sized glass bowl and microwave in 30 second increments until smooth and melted, stirring every 30 seconds. Remove and let cool slightly.
Peel the bananas and cut them in half horizontally. Then, cut each piece in half vertically.
On the flat cut side of each banana piece, spread about 1 Tbsp. of peanut butter, and place bananas peanut butter side up on your parchment-lined sheet pan. Continue until all banana pieces are smeared with peanut butter, ensuring no bananas are touching and each has plenty of space.
Drizzle about 1 tsp. of the melted chocolate over each banana.
Place in freezer for 30 minutes. Once frozen, remove from parchment-lined paper into a freezer-safe container with a lid or gallon-sized plastic bag. Store in freezer until ready to enjoy!
