Mini Avocado & Hummus Quesadillas

Ingredients

  • Small tortillas
  • 1 avocado (mashed)
  • 1/2 cup hummus
  • Low fat shredded cheese

Instructions

  • Spread a layer of mashed avocado on one half of each tortilla.
  • Add a layer of hummus on top of the avocado.
  • Sprinkle shredded cheese on top.
  • Fold tortillas in half and cook in a preheated skillet for about 2-3 minutes on each side, until the cheese is melted and the tortillas are golden brown.
  • Cut into wedges and serve warm.
