Ingredients

  • 2 cups rolled oats
  • 1 cup raw sunflower seeds
  • 2 cups nuts (of your choice)
  • 1 cup raw pumpkin seeds
  • 1/4 cup sesame seeds
  • 1 cup unsweetened cereal (of your choice)
  • 3 Tbsp. chia seeds
  • 2 Tbsp. flaxseed meal
  • 2 Tbsp. brown sugar
  • 3 Tbsp. canola oil
  • 1 1/2 tsp. ground cinnamon
  • 1/4 tsp. salt
  • 1/3 cup maple syrup (or honey)
  • 3/4 cup chopped dried fruit (raisins, apricots, cherries, blueberries, etc.)

Instructions

  • Preheat oven to 325˚F and position a rack in center of oven. Line a sheet pan with foil.
  • In a large mixing bowl, combine oats, seeds, nuts, cereal and flaxseed meal. Set aside.
  • In a small saucepan over low heat, warm the oil, cinnamon, salt and maple syrup. Pour over the dry ingredients and mix well.
  • Spread the mixture evenly onto sheet pan and bake for 20 minutes.
  • Once the granola is visibly golden brown, remove from the oven and stir in dried fruit. Allow to cool completely.

Notes

  • When stored in a container with an air-tight seal, it should keep for 2-3 weeks.
  • For a delicious parfait, top low fat yogurt with granola, fresh berries and bananas.
