These homemade peanut butter chewy granola bars are full of healthy fats and fiber. Sweetened with honey, these are the perfect snack for adults or kids on a busy weekday. Feel free to swap out a different nut butter or nuts/seeds or add raisins and mini dark chocolate chips to please your family’s taste buds.
Line an 8 x 8 baking dish with parchment paper and set aside.
In a large mixing bowl, add peanut butter, honey, vanilla, salt and cinnamon. Using a spoon or spatula, mix until combined.
Add in oats, cashews, pumpkin seeds and dried cherries and mix until combined. Mixture will appear sticky and somewhat dry.
Using a rubber spatula, scrape the oat mixture into the prepared baking dish.
Lightly spray the bottom of a glass cup or a plastic measuring cup with cooking spray, and use that side to flatten out the mixture until it is even across the pan.
Place in refrigerator and cool for at least 2 hours, until mixture is set and not crumbly.
Remove from fridge and cut into 12 slices. Store in a container with a tight-fitting lid in the fridge for up to 5 days. Enjoy!
Notes
Any nut butter can be used, as well as any nut or seed! Feel free to use almond butter, walnuts, etc.
Any dried fruit can be used here as well — consider raisins, cranberries, dates, etc.
