Pumpkin Pie Spiced Energy Balls

These kid-friendly energy balls are packed with healthy fats, fiber and the flavors of fall! They are easy to make, and there is plenty of room to get creative using the ingredients you have on hand.

Equipment

  • Blender or food processor

Ingredients

  • 1.5 cups rolled oats
  • ½ cup canned pumpkin
  • ½ cup peanut butter or other nut butter
  • ¼ cup maple syrup
  • 1 tsp. vanilla extract
  • 1.5 tsp. pumpkin pie spice
  • ¼ tsp. salt
  • 1/3 cup pumpkin seeds
  • 2 Tbsp. chia seeds

Optional:

  • flax seeds
  • dark chocolate chips
  • raisins
  • chopped walnuts
  • chopped pecans
  • shredded coconut

Instructions

  • Line a sheet pan with parchment paper.
  • Add oats, canned pumpkin, peanut butter, maple syrup, vanilla extract, pumpkin pie spice and salt to a large food processor or blender. Pulse or blend until the ingredients are combined. Some of the oats will break down and some may stay large — that is okay.
  • Add pumpkin seeds, chia seeds and other optional add-ins. Pulse and blend again until just combined, leaving a bit of texture to the mixture.
  • Transfer the mixture to a large bowl. Refrigerate the mixture for one hour so the balls are easier to roll!
  • Once you’re ready to make the balls, lightly wet your hands to help with stickiness. Using your hands, roll the mixture into 1 ½ inch balls. Place each ball on the parchment lined baking sheet. Refrigerate for one hour until set.
  • Enjoy immediately or store in the refrigerator for 3-4 days.

Notes

• Any nut butter can be used. For a nut free version, try sunflower seed butter.
• Feel free to sub local honey for the maple syrup or remove entirely.
• In a hurry? Place balls in the freezer to “set” faster.
• If you do not have a food processor or blender, you can mix in a large bowl with a large metal spoon or spatula.
