Preheat oven to 350°F. Grease an 8×8 inch baking pan with canola oil. Set aside.
Peel the apple and cut the flesh away from the core. Discard the core. Place the remaining apple in a food processor and pulse until fine, almost puréed.
Heat the canola oil, honey, peanut butter, applesauce and salt together in a medium saucepan over medium-high heat.
Stir well and once combined, add the apple purée and stir well. Remove from heat.
Add the oats, cinnamon, dried fruit and seeds. Stir to form a sticky mixture.
Transfer the mixture to the greased baking pan, pressing evenly into the pan. Bake for about 20 minutes or until golden brown. Cool completely before cutting into 6 bars.
