Ingredients

Dry Ingredients

  • 1 cup whole wheat flour (or all-purpose flour)
  • ½ cup unsweetened cocoa powder
  • 1 tsp. baking soda
  • ½ tsp. baking powder
  • ½ tsp. salt
  • ½ tsp. cinnamon (optional, but boosts flavor)

Wet Ingredients

  • ¾ cup plain Greek yogurt
  • 2 eggs
  • cup pure maple syrup (or honey)
  • ¼ cup milk (any kind)
  • 2 Tbsp. vegetable oil
  • 1 tsp. vanilla extract

Mix-Ins

  • cup chocolate chips of your choice (dark, semi-sweet, milk)

Instructions

  • Preheat oven to 350°F. Line a muffin tin with paper liners or lightly grease.
  • In a large bowl, whisk together dry ingredients.
  • In a separate bowl, whisk together Greek yogurt, eggs, maple syrup, milk, oil and vanilla until smooth.
  • Pour wet ingredients into dry and stir gently until just combined. Do not overmix.
  • Fold in chocolate chips.
  • Divide batter evenly into 12 muffin cups.
  • Bake 16-20 minutes, or until a toothpick inserted comes out mostly clean.
  • Cool 5 minutes in the pan.
