Dry Ingredients
- 1 cup whole wheat flour (or all-purpose flour)
- ½ cup unsweetened cocoa powder
- 1 tsp. baking soda
- ½ tsp. baking powder
- ½ tsp. salt
- ½ tsp. cinnamon (optional, but boosts flavor)
Wet Ingredients
- ¾ cup plain Greek yogurt
- 2 eggs
- ⅓ cup pure maple syrup (or honey)
- ¼ cup milk (any kind)
- 2 Tbsp. vegetable oil
- 1 tsp. vanilla extract
Mix-Ins
- ⅓ cup chocolate chips of your choice (dark, semi-sweet, milk)
Preheat oven to 350°F. Line a muffin tin with paper liners or lightly grease.
In a large bowl, whisk together dry ingredients.
In a separate bowl, whisk together Greek yogurt, eggs, maple syrup, milk, oil and vanilla until smooth.
Pour wet ingredients into dry and stir gently until just combined. Do not overmix.
Fold in chocolate chips.
Divide batter evenly into 12 muffin cups.
Bake 16-20 minutes, or until a toothpick inserted comes out mostly clean.
Cool 5 minutes in the pan.
