Easy Chicken Foil Pack Dinner

  • 1 lb. boneless skinless chicken breasts (cut into 1/2-inch-thick slices)
  • 2 tsp. Italian seasoning
  • 1 package 16 oz. frozen broccoli, cauliflower and carrot blend, thawed, drained
  • 4 oz. low fat cheddar cheese


  • Heat oven to 350°F.
  • Spray 4 large sheets of heavy-duty foil with cooking spray; top with chicken, Italian seasoning and vegetables. Fold to make 4 packets.
  • Bake at 350°F for 22-25 minutes or until chicken is done. Cut slits in foil to release steam before carefully opening packets.
  • Top ingredients (still in packets) with cheese.


Put a spin on this recipe to make it your own. Use low sodium taco seasoning or swap out the low fat cheddar cheese for low fat mozzarella cheese.
