Ingredients

  • 1 pineapple
  • 4 oz. semi-sweet baking chocolate chips
  • Toasted shredded coconut
  • Lollipop sticks or toothpick

Instructions

  • Slice pineapple into triangles that are 1/2 inch thick. Place each slice on a lollipop stick or toothpick.
  • In a bowl, melt chocolate in the microwave at 30-second intervals, stirring in between.
  • Coat each pineapple piece halfway with chocolate and lay on baking sheet lined with parchment paper. Sprinkle with coconut.
  • Allow the pops to set in the refrigerator for 15-20 minutes and serve!
