Ingredients

Salad:

  • 2 cups strawberries (sliced)
  • 1 cup grilled corn
  • 1 cup zucchini (diced)
  • 1 cup cooked beans (your choice)
  • 2 cups salad greens
  • 1/4 cup toasted pumpkin seeds

Honey Vinaigrette:

  • 3 Tbsp. olive oil
  • 1 Tbsp. vinegar
  • 1 Tbsp. honey
  • Salt to taste

Instructions

  • In a small bowl or jar, whisk together the olive oil, vinegar, honey and salt until well combined.
  • In a large bowl, add the salad greens and drizzle with a small amount of the vinaigrette. Toss lightly to coat.
  • Add the strawberries, grilled corn, zucchini and beans. Gently toss to combine.
  • Transfer to a serving bowl and sprinkle with the toasted pumpkin seeds.
  • Drizzle with additional vinaigrette, if desired, and serve immediately.
