Skillet Lemon Garlic Chicken

In this recipe, simple chicken breasts get elevated with a lemon garlic drizzle! The garlic and lemon are drizzled over the chicken for a fresh, juicy flavor. A healthy protein option for meal prep, you can serve this on a salad or with a side of brown rice and steamed veggies for a complete meal!

Ingredients

  • 2 Tbsp. olive oil (divided)
  • lbs. chicken breasts (1 inch thick)
  • Salt and pepper to taste
  • 3 Tbsp. water
  • 1 lemon (juiced)
  • 4 garlic cloves (minced)

Instructions

  • Season both sides of chicken breasts with salt and pepper and set aside.
  • Heat 1 Tbsp. of olive oil in a large, non-stick skillet with a lid over medium-high heat.
  • Once oil is hot, add chicken breasts, giving each one plenty of space. Cook uncovered for 2-3 minutes, until chicken is golden brown on the bottom.
  • Using kitchen tongs, flip the chicken and add water to the pan. Reduce heat to low and cover the skillet.
  • Continue cooking for 10-12 minutes, until chicken is cooked through and no longer pink in the middle (and has an internal temperature of 165°F).
  • Move chicken to a clean pan and let sit.
  • Add remaining Tbsp. of olive oil to the hot skillet. Once hot, add minced garlic and cook, stirring continuously until fragrant, about 30-45 seconds. Remove the pan from heat and stir in lemon juice.
  • Portion the chicken onto plates. Use a spoon to drizzle the lemon garlic sauce over each chicken breast. Enjoy!

Notes

  • This chicken is great for meal prepping!
  • Make sure chicken breasts are the same size/thickness to ensure even cooking time.
  • Store leftover chicken with juices in the fridge for 3-4 days.
