In this recipe, simple chicken breasts get elevated with a lemon garlic drizzle! The garlic and lemon are drizzled over the chicken for a fresh, juicy flavor. A healthy protein option for meal prep, you can serve this on a salad or with a side of brown rice and steamed veggies for a complete meal!
Season both sides of chicken breasts with salt and pepper and set aside.
Heat 1 Tbsp. of olive oil in a large, non-stick skillet with a lid over medium-high heat.
Once oil is hot, add chicken breasts, giving each one plenty of space. Cook uncovered for 2-3 minutes, until chicken is golden brown on the bottom.
Using kitchen tongs, flip the chicken and add water to the pan. Reduce heat to low and cover the skillet.
Continue cooking for 10-12 minutes, until chicken is cooked through and no longer pink in the middle (and has an internal temperature of 165°F).
Move chicken to a clean pan and let sit.
Add remaining Tbsp. of olive oil to the hot skillet. Once hot, add minced garlic and cook, stirring continuously until fragrant, about 30-45 seconds. Remove the pan from heat and stir in lemon juice.
Portion the chicken onto plates. Use a spoon to drizzle the lemon garlic sauce over each chicken breast. Enjoy!

Make sure chicken breasts are the same size/thickness to ensure even cooking time.
Store leftover chicken with juices in the fridge for 3-4 days.
