Ingredients

  • Spring mix greens
  • 1/4 cup yellow squash
  • 1/4 red or green bell pepper (or both)
  • 2 Tbsp. Balsamic Vinaigrette

Instructions

  • Roast veggies in the oven at 350°F for 10-12 minutes or sauté in a small pan over medium heat.
  • Mix all ingredients in a bowl.
  • Add dressing and enjoy at home or on-the-go!
