Ingredients

  • 1 cup spring mix greens
  • 1/4 cup yellow squash (diced)
  • 1/4 red or green bell pepper (diced or sliced)

Instructions

  • Roast veggies in the oven at 350°F for 10-12 minutes.
  • Mix all salad ingredients in a bowl.
  • Add dressing and enjoy at home or on-the-go!
