Ingredients

  • 2 Tbsp. olive or coconut oil
  • 2 cups pumpkin seeds
  • 2 Tbsp. honey or maple syrup for sweetening
  • 1 ½ tsp. pumpkin pie spice

Instructions

  • Preheat oven to 350°.
  • Mix together oil, sweetener and pumpkin pie spice in a bowl.
  • Add pumpkin seeds and toss until evenly coated.
  • Spread seeds across a baking sheet lined with parchment paper and roast for 30 minutes.
  • Let cool. Serve as a snack or topping for salads, oatmeal or Greek yogurt.

Notes

While your seeds roast, do some spooky moves! Walk around like a zombie, dance to shake the cobwebs off … or pretend to be a superhero and do 10 arm circles in each direction!
