Ingredients

  • 1/2 tsp. ground cinnamon
  • 1 1/2 tsp. ground allspice
  • 1 1/2 tsp. black pepper
  • 1 Tbsp. ground hot pepper
  • 2 tsp. oregano
  • 2 tsp. thyme
  • 1/2 tsp. salt
  • 6 cloves garlic (finely chopped)
  • 1 cup onion (pureed or finely chopped)
  • 1/4 cup vinegar
  • 3 Tbsp. brown sugar
  • 8 pieces skinless chicken (4 breasts, 4 drumsticks)

Instructions

  • Preheat oven to 350℉. Wash chicken and pat dry.
  • Combine all ingredients except chicken in large bowl. Rub seasonings over chicken and marinate in the refrigerator for 1-6 hours overnight.
  • Space chicken evenly on nonstick or lightly greased baking pan.
  • Cover with aluminum foil and bake for 30 minutes covered and 30 minutes uncovered.

Notes

Serve this savory meal on top of black beans or rice.
