Italian Chop Salad

Ingredients

SALAD

  • 3 cups chopped romaine lettuce
  • 1 can chickpeas (also known as garbanzo beans, drained and rinsed)
  • 1/2 cup green or black olives (chopped)
  • 4 cups of vegetables of your choice

VINAIGRETTE

  • Zest and juice of 2 limes
  • 1/4 cup canola oil
  • 1 tsp. honey
  • 2 - 3 tsp. ground cumin
  • 1/4 tsp. black pepper
  • 1/2 tsp. salt

Instructions

  • Combine all salad ingredients in a large mixing bowl.
  • In a small bowl, whisk all vinaigrette ingredients together and set aside.
  • Pour vinaigrette over salad and serve immediately.
