SALAD
- 3 cups chopped romaine lettuce
- 1 can chickpeas (also known as garbanzo beans, drained and rinsed)
- 1/2 cup green or black olives (chopped)
- 4 cups of vegetables of your choice
VINAIGRETTE
- Zest and juice of 2 limes
- 1/4 cup canola oil
- 1 tsp. honey
- 2 - 3 tsp. ground cumin
- 1/4 tsp. black pepper
- 1/2 tsp. salt
Combine all salad ingredients in a large mixing bowl.
In a small bowl, whisk all vinaigrette ingredients together and set aside.
Pour vinaigrette over salad and serve immediately.
