This healthy hot honey ground beef bowl is sure to satisfy your taste buds for something delicious yet nourishing. A meal packed full of protein, this dish is sure to keep you full for hours! Taco-seasoned ground beef and sweet potatoes come together with creamy cottage cheese and a variety of toppings, all drizzled with a touch of sweetness and heat! No need to buy hot honey from the store, save money and make it at home with just two ingredients.
Preheat the oven to 425°F. Line a large baking sheet with parchment paper.
Add the diced sweet potatoes to the baking sheet. Drizzle with ½ Tbsp. olive oil and sprinkle with 1 Tbsp. taco seasoning and the cinnamon. Toss to coat.
Roast the sweet potatoes for 30–35 minutes, stirring halfway through. They’re done when tender and lightly browned. Remove from the oven and set aside to cool.
While the sweet potatoes roast, heat the remaining olive oil in a large nonstick skillet over medium heat. Add the zucchini and a dash of salt. Cook for 2–3 minutes, stirring occasionally.
Add the ground beef, ½ tsp. salt and ¼ tsp. pepper to the skillet. Break the beef into small pieces with a spatula. Cook for about 8 minutes, or until browned and fully cooked.
Stir in the remaining 1 Tbsp. taco seasoning. Cook for 2–3 more minutes. If the mixture looks dry, add a small splash of water. Remove from heat.
Divide the sweet potatoes and beef mixture evenly among 4 bowls. Top each with ½ cup cottage cheese, ¼ of the avocado and ½ Tbsp. honey. Sprinkle with red pepper flakes and add any other toppings you like.
