Ingredients

  • 1 Tbsp. olive oil (divided)
  • 3 sweet potatoes (diced, about 4 cups)
  • 2 Tbsp. low sodium taco seasoning (divided)
  • ½ tsp. cinnamon
  • 1 zucchini (diced small)
  • ½ tsp. salt
  • ¼ tsp. black pepper
  • 1 lb. lean ground beef
  • 2 cups low fat cottage cheese
  • 1 avocado (cubed)
  • 2 Tbsp. honey
  • 1 tsp. red chili flakes

Optional toppings:

  • cilantro
  • pickled red onions
  • jalapeños
  • low fat shredded cheese

Instructions

  • Preheat the oven to 425°F. Line a large baking sheet with parchment paper.
  • Add the diced sweet potatoes to the baking sheet. Drizzle with ½ Tbsp. olive oil and sprinkle with 1 Tbsp. taco seasoning and the cinnamon. Toss to coat.
  • Roast the sweet potatoes for 30–35 minutes, stirring halfway through. They’re done when tender and lightly browned. Remove from the oven and set aside to cool.
  • While the sweet potatoes roast, heat the remaining olive oil in a large nonstick skillet over medium heat. Add the zucchini and a dash of salt. Cook for 2–3 minutes, stirring occasionally.
  • Add the ground beef, ½ tsp. salt and ¼ tsp. pepper to the skillet. Break the beef into small pieces with a spatula. Cook for about 8 minutes, or until browned and fully cooked.
  • Stir in the remaining 1 Tbsp. taco seasoning. Cook for 2–3 more minutes. If the mixture looks dry, add a small splash of water. Remove from heat.
  • Divide the sweet potatoes and beef mixture evenly among 4 bowls. Top each with ½ cup cottage cheese, ¼ of the avocado and ½ Tbsp. honey. Sprinkle with red pepper flakes and add any other toppings you like.

Notes

  • This dish can be made with ground turkey for an even lighter meal.
  • The toppings are endless! Serve with diced cucumbers, shredded cabbage, etc.
  • Add black beans for more fiber.
  • Sub mushrooms for the zucchini for a cooked veggie twist!
