Healthy Lasagna Soup

Ingredients

  • 1 1/2 lb. ground turkey
  • 1 onion (diced)
  • 4 garlic cloves (minced)
  • 2 tsp. dried Italian seasoning
  • 30 oz. marinara sauce
  • 4 cups unsalted beef broth
  • 8 oz. lasagna noodles (uncooked and broken)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 10 oz. frozen chopped spinach
  • Salt and pepper to taste

Instructions

  • Cook turkey, onion and garlic over medium-high heat until no pink remains Drain meat and place in slow cooker.
  • Add all remaining soup ingredients except pasta, Parmesan cheese and spinach. Cover and cook on low 7-8 hours or high 3-4 hours.
  • In a separate pot, cook pasta al dente according to package instructions.
  • Add cooked pasta and frozen spinach and stir to combine. Cover and cook an additional 10-15 minutes.
  • Spoon into bowls, top with grated Parmesan cheese and enjoy!
