Instructions
Heat a large soup pot over medium heat and add olive oil.
Once oil is hot, add diced onion and red bell peppers and a dash of salt, and cook for 7-8 minutes, stirring frequently. Stir in minced garlic and cook until fragrant, about 30 seconds.
Add in ground turkey, taco seasoning and salt. Cook, breaking apart meat with wooden spatula, until browned, about 8 minutes.
Once turkey is browned, add in diced tomatoes, chicken broth and kidney beans, and stir well to combine. Bring contents to a boil then reduce heat and simmer for 30 minutes, stirring once or twice as it simmers.
After chili has simmered for 30 minutes, taste for seasonings and add additional salt, pepper or red chili flakes as needed. Chili will be thick.
Divide chips between four bowls. Ladle chili over chips, then top with shredded cheese and optional toppings. Enjoy!
Notes
Chopped zucchini, mushrooms, yellow squash and green bell pepper are all great optional add-ins.
