Freezer-Friendly Breakfast Burritos

Ingredients

  • 1 Tbsp. olive oil (divided)
  • 1 lb. ground turkey breakfast sausage
  • 1 green bell pepper (diced)
  • 14.5- oz canned black beans (drained and rinsed)
  • 8 eggs
  • Salt and pepper to taste
  • 1 cup low fat shredded cheese
  • 6 whole grain tortillas (burrito-size)

Optional toppings:

  • salsa
  • plain Greek yogurt
  • guacamole
  • cilantro

Instructions

  • Heat ½ Tbsp. olive oil in a large skillet over medium heat. Add the turkey sausage and bell pepper. Break the sausage into small pieces with a spatula and cook for 6–8 minutes, or until the sausage is fully cooked and the pepper is soft.
  • Add the black beans. Stir the black beans into the sausage mixture. Transfer the mixture to a clean plate and set aside.
  • Crack the eggs into a bowl and whisk with a fork until combined.
  • Reduce the skillet heat to medium-low and add the remaining ½ Tbsp. olive oil. Pour in the eggs and gently stir with a spatula until scrambled and fully cooked. Season with salt and pepper, then remove from heat.
  • Warm the tortillas in the microwave until soft and easy to fold. Divide the sausage mixture, scrambled eggs and cheese evenly among the 6 tortillas.
  • Fold the bottom of each tortilla over the filling. Fold in both sides, then roll tightly to close. Place seam-side down.
  • Let the burritos cool completely. Wrap each burrito tightly in foil and place in a freezer-safe bag. Store in the freezer until ready to eat.
  • To reheat: Remove the foil from one frozen burrito and loosely wrap it in a damp paper towel. Place on a microwave-safe plate and microwave for 2–3 minutes, flipping halfway through. Let cool for 1 minute before eating. Add your favorite toppings and enjoy!

Notes

  • Enjoy your frozen breakfast burritos within 1-2 months for the best quality. 
  • Like a little heat? Add chopped fresh or canned jalapeños to the filling. 
  • Make them your own! Serve with salsa, plain Greek yogurt, guacamole, cilantro or your family's favorite toppings.
