This is a coffee-shop-style breakfast sandwich that is homemade and healthier! You will be surprised how easy it is to make bagels at home with just a few ingredients. These bagels have more protein than store-bought options thanks to the addition of Greek yogurt. They are also very versatile and make for a delicious beginning to a yummy meal!
Preheat oven to 375°F. Line a large, rimmed sheet pan with parchment paper and lightly coat with cooking spray.
In a large mixing bowl, whisk together the whole wheat flour, baking powder and salt.
Using a spatula, mix in Greek yogurt until a rough, crumbly-looking ball is formed.
Lightly flour a clean countertop or large cutting board. Lightly coat your hands with a touch of cooking spray to prevent dough from sticking to your hands.
Knead dough until the ingredients are well combined and a smoother ball is formed. The dough should no longer be sticky.
Separate the dough into 8 equal parts.
On your floured surface, use your hands to roll each piece of dough into a rope shape. Connect the ends of the ropes together, slightly overlapping, and pinch together to form a bagel shape.
Place uncooked bagels on prepared sheet pan. Crack the egg in a small bowl and whisk until smooth. Lightly brush the tops of the bagels with egg wash, using a small spoon to spread it evenly. Option to top some (or all) of the bagels with minced garlic and/or sesame seeds for an “everything bagel” flavor.
Bake in the oven for 20-25 minutes. Bagels will be lightly brown on the top when they are done. Remove from oven and let cool for about 15 minutes.
For the breakfast sandwiches:
While the bagels are cooling, scramble your eggs (or prepare eggs in your desired way). Cook 4 eggs for 1-egg sandwiches or 8 eggs for 2-egg sandwiches.
Once the bagels are cool, use a knife to carefully slice in half.
Layer one half of the bagel with 1 Tbsp. cream cheese, eggs, sliced tomato and arugula. Place top of bagel on to create a sandwich and enjoy!
Notes
• The best way to equally separate the dough is to create an evenly shaped loaf and use a sharp knife to cut in half. Cut those two pieces in half once again, and then cut the remaining four pieces in half once again to have eight small pieces of dough.
• You can sub mashed avocado for the cream cheese for a serving of healthy fats.
• Store your extra bagels in the freezer and remove to thaw before using.
• You can use these for lunch sandwiches as well! Just use your favorite lean turkey or chicken breasts and layer with lettuce, tomato and condiments of choice.
