Make busy mornings easier with these Freezer-Friendly Breakfast Burritos! Filled with turkey sausage, eggs, black beans, bell pepper and cheese, they’re packed with protein and fiber to help keep you full. Make a batch ahead of time, freeze and reheat for an easy grab-and-go breakfast the whole family can enjoy.
Heat ½ Tbsp. olive oil in a large skillet over medium heat. Add the turkey sausage and bell pepper. Break the sausage into small pieces with a spatula and cook for 6–8 minutes, or until the sausage is fully cooked and the pepper is soft.
Add the black beans. Stir the black beans into the sausage mixture. Transfer the mixture to a clean plate and set aside.
Crack the eggs into a bowl and whisk with a fork until combined.
Reduce the skillet heat to medium-low and add the remaining ½ Tbsp. olive oil. Pour in the eggs and gently stir with a spatula until scrambled and fully cooked. Season with salt and pepper, then remove from heat.
Warm the tortillas in the microwave until soft and easy to fold. Divide the sausage mixture, scrambled eggs and cheese evenly among the 6 tortillas.
Fold the bottom of each tortilla over the filling. Fold in both sides, then roll tightly to close. Place seam-side down.
Let the burritos cool completely. Wrap each burrito tightly in foil and place in a freezer-safe bag. Store in the freezer until ready to eat.
To reheat: Remove the foil from one frozen burrito and loosely wrap it in a damp paper towel. Place on a microwave-safe plate and microwave for 2–3 minutes, flipping halfway through. Let cool for 1 minute before eating. Add your favorite toppings and enjoy!
