  • skinny wooden skewers

Ingredients

  • 1 lb. boneless skinless chicken breasts (cut into 1/5-inch pieces)
  • 1 medium red bell pepper (cut into 1-inch pieces)
  • 1 medium zucchini or yellow summer squash (cut into 1-inch pieces)
  • 1 medium red onion (cut into wedges)
  • 1/4 crumbled feta cheese

Instructions

  • Preheat your oven or grill to high (350℉ for the oven).
  • Thread 4 pieces of chicken on 1 skewer; use as many skewers as necessary until all of the chicken is used.
  • Thread the vegetables on wooden skewers, alternating bell pepper, zucchini/squash and onion wedges.
  • Cook chicken and veggies on skewers for 5-7 minutes per side, until cooked through. Serve immediately.
