  • Slow Cooker


  • 1 cup onion (diced)
  • 1 Tbsp. garlic (minced)
  • 1 lb. chicken breasts
  • 4 oz. can diced green chiles
  • 1 cup chicken broth (unsalted)
  • 1/2 Tbsp. paprika
  • 1/4 tsp. pepper
  • 2 Tbsp. taco seasoning
  • 13.4 oz. can cannellini beans (rinsed and drained)
  • 1 cup frozen corn


  • Lay chicken breasts along the bottom of the slow cooker.
  • Cover chicken with onions, garlic, green chiles, broth and spices.
  • Cover and cook on low for 6 hours.
  • After 6 hours, remove chicken breasts and use two forks to shred. Stir the shredded chicken back in with the other ingredients.
  • Add cannellini beans and frozen corn and allow the mixture to sit for 10-20 minutes.
  • Garnish with avocado or guacamole and enjoy!
