- 1 cup white onion (diced)
- 1 Tbsp. garlic (minced)
- 1 lb. chicken breasts
- 1 can diced green chiles (4 oz.)
- 1 cup low sodium chicken broth (unsalted)
- 1/2 Tbsp. paprika
- 1/4 tsp. black pepper
- 2 Tbsp. low sodium taco seasoning
- 1 can cannellini beans (13.4 oz., rinsed and drained)
- 1 cup frozen corn
Lay chicken breasts along the bottom of the slow cooker.
Cover chicken with onions, garlic, green chiles, broth and spices.
Cover and cook on low for 6 hours.
After 6 hours, remove chicken breasts and use two forks to shred. Stir the shredded chicken back in with the other ingredients.
Add cannellini beans and frozen corn and allow the mixture to sit for 10-20 minutes.
Garnish with avocado or guacamole and enjoy!
