Broccoli Cheddar Breakfast Bake

This egg bake is a hearty, comforting dish packed with flavor and color. The cheddar cheese melts in with the eggs and broccoli as this dish bakes, resulting in a delicious, satisfying breakfast or brunch. Make for a group breakfast or slice it up for a make-ahead option.

Equipment

Ingredients

  • 10 oz. frozen broccoli
  • ½ Tbsp. olive oil
  • 1 yellow onion (diced)
  • 10 eggs
  • ½ cup milk
  • 1 cup cheddar cheese
  • ½ tsp. garlic powder
  • ½ tsp. salt
  • ½ tsp. black pepper
  • green onion (optional)

Instructions

  • Preheat oven to 350°F. Lightly spray a 9x9 baking dish with cooking spray.
  • Place frozen broccoli in a clean colander in the sink to thaw while you prepare the remaining ingredients.
  • Heat a sauté pan on medium heat. Add olive oil.
  • Once hot, add diced onion and cook until tender, about 4-5 minutes. Remove from heat.
  • Chop the thawed broccoli florets into small pieces.
  • In a large mixing bowl, whisk the eggs until smooth. Stir in milk, cooked onion, thawed broccoli, cheese, garlic powder, salt and pepper.
  • Pour mixture into prepared baking dish.
  • Place in preheated oven and bake for 35-40 minutes, until eggs are set.
  • Remove from oven and let cool for 10 minutes. Slice into 6-9 servings. Option to top with green onions. Enjoy!

Notes

  • This recipe is very versatile! Cauliflower, bell pepper and kale all make great additions or substitutions.
  • Serve with a side of fresh fruit.
  • Best if enjoyed within three days.
