Ingredients
10oz.frozen broccoli
½Tbsp.olive oil
1yellow onion(diced)
10eggs
½cupmilk
1cupcheddar cheese
½tsp.garlic powder
½tsp.salt
½tsp.black pepper
green onion(optional)
Instructions
Preheat oven to 350°F. Lightly spray a 9x9 baking dish with cooking spray.
Place frozen broccoli in a clean colander in the sink to thaw while you prepare the remaining ingredients.
Heat a sauté pan on medium heat. Add olive oil.
Once hot, add diced onion and cook until tender, about 4-5 minutes. Remove from heat.
Chop the thawed broccoli florets into small pieces.
In a large mixing bowl, whisk the eggs until smooth. Stir in milk, cooked onion, thawed broccoli, cheese, garlic powder, salt and pepper.
Pour mixture into prepared baking dish.
Place in preheated oven and bake for 35-40 minutes, until eggs are set.
Remove from oven and let cool for 10 minutes. Slice into 6-9 servings. Option to top with green onions. Enjoy!
