Equipment

  • Oven-safe skillet

Ingredients

  • 12 large eggs
  • 1/2 cup 2% milk
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 6 slices turkey bacon
  • 2 cups bell peppers (sliced or chopped)
  • 1 cup low fat shredded cheese

Instructions

  • Preheat oven to 350°F.
  • Heat peppers in microwave for 3 minutes, then set aside.
  • Add bacon to oven-safe skillet* and cook on stovetop. Remove and chop, then set aside.
  • In a medium bowl, mix eggs, milk, salt and pepper together, then add mixture to same skillet.
  • Cook on stovetop for 3-5 minutes until sides start to set up.
  • Place skillet in oven and bake for 8-15 minutes.
