Berry Salad with Chicken

Ingredients

Salad

  • 2 cups chopped romaine (or salad greens of your choice)
  • 1 lb. rotisserie chicken (shredded)
  • 1 1/2 cups strawberries (chopped)
  • 1 cup fresh blueberries
  • 1 cup canned chickpeas (rinsed and drained)
  • 3 oz. feta cheese (crumbled)
  • 1/4 cup sliced almonds

Honey – Lime Vinaigrette Dressing

  • ¼ cup fresh lime juice
  • ½ tsp. lime zest
  • 2 Tbsp. honey
  • 1 Tbsp. red wine vinegar
  • ½ cup olive oil
  • Pinch of salt and pepper

Instructions

  • Make the vinaigrette by whisking together all ingredients. Set aside.
  • In a large serving bowl, combine the romaine, chicken, strawberries, blueberries, chickpeas, feta and almonds. Serve with the vinaigrette on the side or add it to the salad just before serving.
