Equipment

Ingredients

  • 1 cup walnuts
  • 3/4 cup rice chex cereal
  • 7 pitted dates
  • 1 ¼ cups creamy peanut butter
  • 1/3 cup flaxseed meal
  • 2 bananas
  • 1/4 cup dark chocolate chips, for drizzling (optional)

Instructions

  • Preheat oven to 325˚F and line a sheet pan with parchment paper. Set aside.
  • Add walnuts and cereal to a blender and pulse until finely ground.
  • Add dates, peanut butter and flaxseed meal and pulse again until combined.
  • Add banana and pulse until fully combined and a dough begins to form.
  • Use a Tbsp. to portion dough into balls. Roll to form a ball and place on the lined sheet pan. Lightly flatten the balls to create a cookie shape.
  • Bake for 9 to 11 minutes, remove from oven and allow to cool completely.
  • Melt chocolate in the microwave. Use a fork to drizzle melted chocolate over the bites and serve.
