Asparagus with Lemon and Garlic

Ingredients

  • 1 lb. of asparagus
  • 2 Tbsp. olive oil
  • 2 garlic cloves minced
  • 3 Tbsp. low fat Parmesan cheese
  • Juice of one lemon
  • Salt and pepper to taste

Instructions

  • Preheat oven to 400 ℉. Arrange asparagus in a single layer on a baking sheet.
  • Toss in olive oil and sprinkle with a little salt and pepper.
  • Roast in the oven for 8-10 minutes. Asparagus should be crisp on the outside and tender in the center.
  • Toss in garlic, Parmesan and lemon juice. Serve immediately.
