Apple Cinnamon Oat Bars

Equipment

Ingredients

  • 2 Tbsp. canola oil (plus extra for greasing)
  • 2 apples
  • 2 Tbsp. honey
  • 1/4 cup peanut butter
  • 1/4 cup unsweetened applesauce
  • pinch of salt
  • 3 cups rolled oats
  • 2 tsp. cinnamon
  • 1/4 cup dried fruit of choice
  • 1 Tbsp. pumpkin seeds
  • 1 Tbsp. chia seeds
  • 2 Tbsp. ground flaxseed

Instructions

  • Preheat oven to 350°F. Grease an 8×8 inch baking pan with canola oil. Set aside.
  • Peel the apple and cut the flesh away from the core. Discard the core. Place the remaining apple in a food processor and pulse until fine, almost puréed.
  • Heat the canola oil, honey, peanut butter, applesauce and salt together in a medium saucepan over medium-high heat.
  • Stir well and once combined, add the apple purée and stir well. Remove from heat.
  • Add the oats, cinnamon, dried fruit and seeds. Stir to form a sticky mixture.
  • Transfer the mixture to the greased baking pan, pressing evenly into the pan. Bake for about 20 minutes or until golden brown. Cool completely before cutting into 6 bars.
