Turkey Waldorf Salad

Ingredients

  • 3 cups cooked turkey (white or dark meat shredded)
  • 1 stalk celery (chopped)
  • 1 Granny Smith apple (chopped)
  • ¾ cup red grapes (chopped)
  • 1/3 cup Greek yogurt
  • 2 tsp. Dijon mustard
  • Salt and pepper to taste
  • Optional: Pecans or walnuts (chopped)

Instructions

  • In a large bowl, toss the turkey, celery, apple and grapes until combined.
  • In a small bowl, whisk together the Greek yogurt, Dijon mustard, salt and pepper.
  • Add your dressing to the large bowl and toss gently until combined.
  • Serve over greens or enjoy as a sandwich on whole wheat bread.
