Ingredients

  • 24 oz. cooked turkey (diced or shredded)
  • 2 bay leaves
  • 1 yellow onion
  • 2 Tbsp. olive oil
  • 2 bell peppers (diced)
  • 1 tsp. salt
  • ½ tsp. black pepper
  • 30 oz. diced tomatoes
  • 1 cup water
  • Low sodium chili seasoning mix

Instructions

  • In a large skillet, heat the olive oil over medium-high heat for 2 minutes. Add the onion, bell peppers and ½ tsp. salt, and cook until the veggies are soft, about 5 minutes.
  • Reduce heat to medium, add seasoning mix and stir for 30 seconds. Slowly add in turkey meat, making sure every piece is coated.
  • Add tomatoes, bay leaves, salt, pepper and water. Bring to a boil.
  • Reduce heat to medium-low and simmer uncovered for 20 minutes. Stir occasionally.
