In a large skillet, heat the olive oil over medium-high heat for 2 minutes. Add the onion, bell peppers and ½ tsp. salt, and cook until the veggies are soft, about 5 minutes.
Reduce heat to medium, add seasoning mix and stir for 30 seconds. Slowly add in turkey meat, making sure every piece is coated.
Add tomatoes, bay leaves, salt, pepper and water. Bring to a boil.
Reduce heat to medium-low and simmer uncovered for 20 minutes. Stir occasionally.
