Spinach Salad with Apple Cider Vinaigrette

Ingredients

  • 1/2 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1 Tbsp. Dijon mustard
  • 1 Tbsp. honey
  • 1 tsp. garlic powder
  • 1 tsp. dry Italian herb seasoning blend
  • 1/2 tsp. kosher salt
  • 1/4 tsp. black pepper
  • 1 lb. spinach
  • 1 red bell pepper (sliced or diced)
  • 1 cup walnuts (toasted and chopped)

Instructions

  • Place spinach and bell pepper in a large bowl and set aside.
  • Whisk remaining ingredients (except walnuts) together well. Alternatively, combine dressing ingredients in a small container with a lid such as a jar and shake well to combine.
  • Toss spinach and bell pepper together with dressing. Top with chopped walnuts.
