Ingredients

  • 8 whole wheat 8” tortillas
  • 1 Tbsp. olive oil (divided)
  • 8 oz. frozen chicken sausage links (thawed)
  • 6 eggs
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 1 avocado (sliced)
  • 1 cup shredded cheddar cheese
  • ¼ cup cilantro (chopped)
  • ½ cup salsa

Instructions

  • Warm tortillas in the microwave for 30-60 seconds. Set aside and let cool.
  • Heat a large skillet over medium heat and add ½ Tbsp. olive oil.
  • Once oil is hot, add the chicken sausage and cook until browned on all sides, about 5-7 minutes. Remove to a cutting board to let cool. After a few minutes, slice the cooked chicken sausages.
  • Add the remaining ½ Tbsp. olive oil to the warm skillet and reduce heat to medium-low. Add eggs and scramble, using a rubber spatula. Remove from heat and add to a clean plate. Sprinkle on salt and pepper.
  • Add chicken sausage, scrambled eggs, shredded cheddar cheese, sliced avocado and cilantro to the tortillas. Option to drizzle salsa on top or serve on the side for dipping. Enjoy!

Notes

  • For a vegetarian option, omit chicken sausage and use warmed black beans instead.
  • Add jalapeños for extra spice.
