Kick off your morning with a healthy, Southwest spin. These breakfast tacos are a wholesome, energizing way to start your day. Packed with protein, this breakfast will keep you satisfied for your busy work or school day. No fancy sauces here —simple store-bought salsa is all you need to round out this tasty dish!
Warm tortillas in the microwave for 30-60 seconds. Set aside and let cool.
Heat a large skillet over medium heat and add ½ Tbsp. olive oil.
Once oil is hot, add the chicken sausage and cook until browned on all sides, about 5-7 minutes. Remove to a cutting board to let cool. After a few minutes, slice the cooked chicken sausages.
Add the remaining ½ Tbsp. olive oil to the warm skillet and reduce heat to medium-low. Add eggs and scramble, using a rubber spatula. Remove from heat and add to a clean plate. Sprinkle on salt and pepper.
Add chicken sausage, scrambled eggs, shredded cheddar cheese, sliced avocado and cilantro to the tortillas. Option to drizzle salsa on top or serve on the side for dipping. Enjoy!

For a vegetarian option, omit chicken sausage and use warmed black beans instead.
