Healthy Egg Bites

  • Muffin pan


  • 1/2 cup baby spinach (chopped)
  • 1 small tomato (diced)
  • 4 strips turkey bacon (cooked and crumbled)
  • 1/4 cup shredded cheddar cheese
  • 7 large eggs
  • 1/4 cup milk
  • Salt and pepper to taste


  • Preheat oven to 350°F.
  • Spray muffin pan generously with nonstick spray.
  • In a medium bowl, whisk together eggs, salt and pepper.
  • Add about 1 Tbsp. of greens, tomatoes, bacon and a sprinkle of cheese to each muffin slot.
  • Pour egg mixture into each slot, leaving a little room at the top.
  • Bake for 20 minutes. If the tops are not fully cooked, cook in 3-minute intervals until they firm up.


Add or substitute your favorite veggies including bell peppers, onions, kale or broccoli.
