Ingredients

  • 1/2 cup olive oil
  • 1/2 cup red wine vinegar
  • 3 roasted red peppers fresh
  • Zest and juice of one orange
  • 1 tsp. fresh or 1/2 tsp. dried thyme leaves
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper

Instructions

  • Blend all ingredients in a blender until smooth.
  • Spoon over fresh greens and your favorite salad toppings.
