Ingredients

  • 4 slices sourdough bread
  • ½ cup shredded mozzarella cheese
  • 1 Roma tomato (sliced)
  • 1 ½ cup shredded rotisserie chicken
  • 1/3 cup pesto sauce
  • 3 Tbsp. plain Greek yogurt
  • Salt and pepper to taste

Instructions

  • Preheat oven to 350°F. Divide the shredded cheese over two slices of bread, and top with tomato slices (about 2-3 slices each). Place in oven and bake for 5-6 minutes, until cheese has started to melt.
  • While bread is toasting, place shredded chicken in small bowl with pesto sauce and Greek yogurt and mix to combine. Add salt and pepper to taste.
  • Remove bread from oven and top with the pesto chicken mixture. Top with plain toasted bread, slice in half and enjoy!
