Preheat oven to 350°F. Divide the shredded cheese over two slices of bread, and top with tomato slices (about 2-3 slices each). Place in oven and bake for 5-6 minutes, until cheese has started to melt.
While bread is toasting, place shredded chicken in small bowl with pesto sauce and Greek yogurt and mix to combine. Add salt and pepper to taste.
Remove bread from oven and top with the pesto chicken mixture. Top with plain toasted bread, slice in half and enjoy!
