Oven-Baked Meatballs

This simple meatball recipe is as versatile as it is delicious! Serve them over a veggie salad or an easy spaghetti with sugar-free marinara or a pesto sauce — the options are endless!

Ingredients

  • 1 ½ lb. ground turkey
  • ½ cup breadcrumbs (or sub 3 Tbsp. almond flour for gluten free)
  • 1 small onion, finely diced (or ½ tsp. onion powder)
  • 3 garlic cloves, minced (or ½ tsp. garlic powder)
  • 1 egg
  • ¾ tsp. salt
  • ½ tsp. black pepper

Instructions

  • Preheat your oven to 400°F and line a large-rimmed sheet pan with parchment paper.
  • Add all ingredients to a large mixing bowl. Spray a small amount of cooking spray on clean hands and rub it in to keep the meat mixture from sticking to your hands.
  • Using your hands, form the mixture into about 1” round balls. The recipe should form between 22-24 balls. Place your meatballs on the prepared sheet pan and bake for 15-17 minutes, until tops begin to brown.
  • Remove from oven and let cool for a few minutes. Enjoy!

Notes

  • If you have fresh herbs on hand, 1-2 Tbsp. of chopped basil, dill, parsley, oregano or thyme would make a tasty addition!
  • You can sub ground chicken or lean ground beef for ground turkey.
  • Store in fridge and consume within 2-3 days.
