Easy Skillet Chicken Bites

Bite-sized chicken pieces area quick, easy and multi-use protein option. Use this dish to feed the whole family or as a part of multiple meals throughout your week. Serve it with a side of roasted sweet potatoes and asparagus or on top of a salad with your favorite veggies and dressing. The options are endless!

Ingredients

  • 2 lb. chicken thighs (cut in 1” bite-sized pieces)
  • ¼ cup all-purpose flour or cornstarch
  • 1 ¼ tsp. sea salt
  • ½ tsp. pepper
  • 1 tsp. garlic powder (optional)
  • 2 Tbsp. olive oil

Instructions

  • In a large mixing bowl, add the flour, salt, pepper and garlic powder (optional).
  • Using a clean cutting board and sharp knife, cut chicken thighs into small, 1” pieces. Add the pieces to the mixing bowl with the flour and seasoning mix. Using clean hands or kitchen gloves, thoroughly coat chicken with the flour.
  • Heat a large, non-stick skillet over medium-high heat. Add 1 Tbsp. olive oil.
  • Place a clean, paper towel-lined plate next to your stovetop.
  • Once oil is hot, swirl it around to coat the bottom of the pan. Add one layer of chicken thigh bites to prevent crowding. Let that batch sear for 3-4 minutes without stirring, until browned on one side.
  • Using a wooden spatula, stir chicken bites so they sear until browned and fully cooked through on the remaining side, about 4 minutes.
  • Place the cooked chicken to one side of the plate to let cool. Add remaining oil to the still-hot pan and cook the remaining chicken the same way, until all chicken has been cooked through.
  • Let cool and enjoy!

Notes

  • Let the chicken bites rest without cutting into them for a few minutes after cooking to keep them from drying out.
  • Store in a container with a tight-fitting lid in the fridge for 3-4 days.
  • Kids may enjoy these served with low sugar ketchup or BBQ sauce!
