One-Pot Beans and Rice

Ingredients

  • 2 Tbsp. olive oil (or canola oil)
  • 1 medium onion (diced)
  • 2-3 cloves garlic (minced)
  • 1 cup brown rice
  • 2 cups water
  • 1/2 tsp. salt
  • 2 cans beans of your choice (drained and rinsed)
  • Sliced green onion for garnish

Instructions

  • In a medium saucepan, heat the olive oil over medium-high heat.
  • Add the onion and sauté until translucent. Add the garlic and cook for about 1 more minute, but do not brown.
  • Add the rice and cook for 1 minute.
  • Add the water, salt and beans. Bring to a simmer, reduce heat to low, cover with a lid and allow to cook about 35 minutes or until liquid is absorbed and the rice is tender. Allow to sit about 10 minutes. Fluff with a fork before serving.

For even more flavor, substitute vegetable stock for water.
