Easy Skillet Broccoli With Cheddar Cheese

This is a simple weeknight side dish that even the picky eaters will enjoy! With a few basic ingredients, the fibrous broccoli gets a flavor upgrade. Don’t like cheese? Simply leave it off! The broccoli develops a lovely roasted flavor when cooked on the stovetop.

Ingredients

  • 2 medium broccoli stalks (chopped in 1” florets)
  • 1 ½ Tbsp. olive oil
  • ½ cup cheddar cheese shredded
  • Salt and pepper to taste

Instructions

  • Heat your skillet over medium-high heat. Add olive oil.
  • Once the oil is hot, add broccoli, salt and pepper. Stir the broccoli until evenly coated with oil.
  • Let it sit for 4-5 minutes, stirring occasionally, until broccoli begins to brown.
  • Spread broccoli in an even layer and sprinkle cheddar cheese on top. Add ¼ cup water to the pan and cover with a lid.
  • Turn heat off and let the pan sit undisturbed for 1-2 minutes or until the cheese has melted. Enjoy!

Notes

  • You can use frozen broccoli here, too. It will create a softer, steamed texture, but it will still be tasty!
  • Sub any other type of cheese for the cheddar.
  • For even more flavor, add garlic powder or paprika with the salt and pepper.
