Easy Oven-Roasted Carrots

This easy roasted carrot recipe is sure to convert even the non-veggie lovers in your life! Roasting carrots in the oven caramelizes them — creating a sweet and comforting flavor. Finished with optional chopped parsley, these look beautiful on a dish. Serve with easy baked chicken breasts and roasted potatoes for a healthy weeknight dinner!

Ingredients

  • 6-8 large carrots, sliced in 1” thick rounds (or half moons if carrots are extra big)
  • 1 Tbsp. olive oil
  • ¾ tsp. salt
  • ¼ tsp. black pepper
  • 1 Tbsp. fresh parsley, minced (optional)

Instructions

  • Preheat the oven to 400°F and line a large, rimmed sheet pan with parchment paper.
  • Add cut carrots, olive oil, sea salt and black pepper to a large mixing bowl. Using clean hands, toss to combine and ensure that carrots are evenly coated in oil and seasonings.
  • Spread the carrots out in one layer on the prepared sheet pan and bake for 25 minutes. Carrots should be lightly browned and easily pierced with a fork.
  • Remove from oven, toss with optional fresh minced parsley and let cool for a few minutes. Enjoy!

Notes

  • Substitute fresh dill for parsley for another delicious combination.
