These simple, juicy weeknight chicken breasts cooked in the oven make a great and versatile meal prep protein! Slice or cube for soups or curries, or simply serve over a veggie salad or brown rice for a high protein, low fat meal. If you’re meal prepping, we suggest doubling the recipe!
Preheat your oven to 400°F and line a sheet pan with parchment paper or aluminum foil.
Place chicken breasts on the prepared sheet pan and drizzle with olive oil.
Season with sea salt and pepper. Use a rubber brush or your clean fingers to rub sea salt/pepper and oil into the chicken breasts. Thoroughly wash hands after handling chicken.
Place in preheated oven and bake for 20-25 minutes, until juices run clear and internal temperature reaches 165°F.
Remove from oven and let cool for 5 minutes undisturbed.
Move to cutting board and cut into desired-sized pieces. Enjoy!

Letting the chicken rest before slicing or chopping is crucial to keep the chicken from drying out.
